Baked Flounder with Citrus Butter

Ingredients
1 lb flounder fillets
1/2 cup butter, room temperature
1 lemon, zest and juice
1 lime, zest and sliced
1 orange, zest and sliced
2 Tbs fresh cilantro, finely chopped
1/2 tsp salt
1/2 tsp black pepper
1/2 cup breadcrumbs
Directions
  1. Preheat oven to 350˚ F.
  2. Place the fish on an oiled baking pan or a baking pan lined with Simply Done® Parchment Paper.
  3. In a bowl, stir together the butter, zests, lemon juice, cilantro, salt and pepper.
  4. Spread the butter mixture over the fish.
  5. Add the lime and orange slices around the fish on the baking pan.
  6. Sprinkle the top of the fish with breadcrumbs.
  7. Bake for 20 to 30 minutes, depending on the thickness of the fish.
